Watermelon Salsa is a perfect for the summer. This recipe is ideal if you want to use fresh vegetables and herbs from your garden or a local farmer’s market. The unique part of this particular recipe is that the watermelon provides some added sweetness.

Watermelon Salsa

12 servings (1/4 cup each serving)

  • 2 cups seedless diced Watermelon
  • ½ cup diced Cucumber
  • ¼ cup diced Red Onion
  • ¼ cup diced Red Pepper
  • 1 Jalapeno seeded and diced
  • ¼ cup minced Cilantro
  • 1 Tbsp. minced fresh Basil
  • 1 Tbsp. minced fresh Mint
  • 2 Tbsp. Honey
  • 1 tsp. Lime Juice

Directions

In a large bowl combine all the ingredients and chill for at least one hour before serving.
