There’s no better time to bring some green into your next dish with spinach, paired with salmon for added flavor. Spinach is packed with vitamins and nutrients, fiber, magnesium and calcium. Salmon contains heart-healthy omega-3.
Try this salmon spinach salad dish at your next luncheon for a fresh, light flavor!
Yield: 2 servings
- 6 ounces salmon fillet
- 2 Tbsp. reduced-fat balsamic vinaigrette, divided
- 3 cups fresh baby spinach
- 1/4 cup cubed avocado
- 1 Tbsp. sunflower kernels, toasted
- 1 Tbsp. dried cranberries
Drizzle salmon with 1 Tbsp. vinaigrette. Place on broiler pan coated with nonstick spray. Broil 3-4 inches from flame for 10-15 minutes or until fish flakes with a fork. Cut in half. Meanwhile, in a large bowl, toss spinach with remaining dressing. Divide between 2 plates, top each with the salmon and half of the avocado, sunflower seeds and dried cranberries.
